Hi,

Firstly, its JAP... i'm in UK

I have tried all connections my Tv has, Composite, Scart, RGB

Its still very choppy, the picture is not going to the edges of my widescreen, the rest of the picture is fine, no jumping or distortion.

This is not a game specific issue, as its like this in the menu system of the Ps2 also.

I'm thinking of buying a high quality ps2 av cable, but does anyone have any idea's as to how to fix it.
 
Just a guess, but you're using an NTSC-J console on presumably a PAL TV. If your TV is PAL... well, there you go.
 
I am wondering if this is because your running an NTSC device on a PAL tv? If so, you could try looking for converters.
Buying American wouldn't solve this issue =O
