Is the MX700 just a cordless version of the MX500? What about the MX300?

Yes, the MX700 is a cordless version of the MX500. I don't know much about the MX300...

mx300 has only 3 buttons. mx310 is a smaller version of the mx500. all the same technology. just diff shapes/number of buttons/cordless option

From what I know:

MX310:
  • Cheapest of the MX series
  • Replaces the MX300 which I think is discontinued (haven't checked)
  • Adds "cruise" scrolling buttons to MX300 design
  • Based on the original Wheel Mouse design
  • Ambidextrous
  • Same optics and processor as the higher end models
MX500:
  • Different design than the MX310
  • Adds thumb buttons
  • Not ambidextrous
  • Optic sensor placed in center of the bottom
MX700
  • Same design as the MX500
  • Optic sensor placed to the right (left when faced down)
  • Much heavier than the MX500; especially when the weight in the MX500 is removed (makes for lightening fast movements in games with the MX500)
  • Of course no wire :D
And the MX900 is the same as the MX700 only it uses Bluetooth instead of its own proprietary radio communication.
