It's been a while since my last build but I'm about to put together a new rig and will probably get the 8800gtx card. Also planning on getting a 30" display to be used as my main display and use my 24" as a secondary one. It's my understanding that the 8800 has (2) dual-link dvi outs so it can power up to two 30" displays if necessary.

This will mostly be a work machine (cad, graphics, renders, programming, etc) but will get its share of game time.

Finally to my question. Can I switch between which monitor is the main unit quickly and easily. For work I will be running both at the same time but some games I would make use of the 30" while other games that can't handle a 30" will step down to the 24".

Piece of cake. Just right click on the display you want to be primary in the Display Control Panel and select Primary. You can also click on the display and check the box for Use as Primary. When done, just repeat to swap back. Just be warned that if you have a lot of icons on your desktop in a special layout, they will probably get moved around.
