Multiple CPUs == Multiple Folding?

I just got involved in this whole folding thing, and have started setting up the first of a few computers I'm going to set up and running. One thing I've noticed is, when I run a single instance of F@H, in my CPU monitors for my two processors, one will be at 100%, while the other will be idling, then they will switch. and back and forth. If I run two instances of F@H will it work both processors at 100%? Is there some way to make a single instance use both processors completely?

Edit, nm just tried it, and it worked. Is there anyway to get it to use both with only one instance of the program however?
 
Welcome to the fold.

As the code is highly optermized to run as a single thread there is no way of splitting it between multiple CPU's without rewiteing it.
So the best result is to run the same number of client as you have CPU's.
