So I know I can easily open the log file that MSI Afterburner will create and take a look at the entries with any web browser or text editor, but is their some kind of program that will generate stats from the log file that MSI Afterburner creates?

It seems to be simple CSV (Comma--separated Values) data, so I'm sure it's very possible to be able to get the averages/highs/lows from the log file with some kind of program.

Nope doesn't work, Excel lists all the values in 1 column.
 
Select the single column then go to Data --> Text to columns --> Delimited --> Choose commas and voila. After that, you can use formulas to find min/max/average as you please.
