Gigabyte uses ITE Super I/O chips, which means you'll need the it87 module and probably a bunch of hacks for newish motherboards.
It's impossible to give advice without output from relevant programs such as sensors-detect, lspci, and lsmod. What does "sensors" report? Can you at least read your CPU temps? I assume you have the "k10temp" module loaded.
