Been doing a bit of reading here to embark on my first mITX build and I'm confused about power supplies vs case vs motherboard.

Some builds I see are using regular ATX power supplies and some builds are using external AC bricks. How does one interface the brick to mITX board and what are some rough sizing guidelines?
 
The bricks plug into a pico PSU. This is good if your needs are modest (sub-120W usually). First you need to decide what you want from the system (graphics, mobo, CPU, drives, etc.) Then draw up a power budget - that will show you what size PSU you need. Then you can find a case to accommodate.

Best pico PSU is 150W. Best SFX PSU is about 450W. Best small (short) ATX PSU is about 800W. PSU are usually at their most efficient drawing about 50% of their rated capacity.
 
I'm planning to use a flavor of mITX board that have no fan on the CPU, integrated graphics, possibly dual Intel NIC, and bootable USB 3 or SATA 3 with a small SSD.
 
Depending on the CPU you pick, and it's power draw, sounds like a pico psu would be great
