I am trying to pick 2GB of memory sticks to go with an E6600 and an Asus P5W DH.

As far as possible, I don't want to pay too much over $200, but I am rather at loss with memory specs.

Should I go for DDR2 800, 900, 1000 or 1066? What's the difference?

Apparently the latency numbers are not that important for the E6600, but what about the PC2 types?

Should I go for a 6400, 7200 or 8000? Or just pick the one that fits my budget because there won't be much of a difference?

It's quite unlikely that I will overclock anything, least of all memory, so I am counting on what the sticks can provide from the start.
 
If you get DDR2 800, which is the same as PC2-6400, you will have the headroom to overclock your processor up to a 400Mhz FSB. DDR2 800 RAM is pretty cheap now so i suggest going with that, so you're safe if you decide you want to OC your processor.
