Memory FAQ confusion

I am thinking about upgrading my memory but have a few questions. I read the entire Memory FAQ but am still confused on a couple issues. Some help would be greatly appreciated.

I have Barton 2600+ and GA-7N400-L motherboard.

My current ram is 2x256 Kingston Hyper X PC3200 at 2-3-2-6.

I was thinking about upgrading to 1024mb.

As far as speed goes would there be much difference in adding one 512mb dimm, or another 2x256 kit?

I am also confused about what timing my new ram should be. If I got PC3200 that was say CAS2.5. Would all my ram run at CAS2.5 or can different dimms run a different timings?

Also, is there any way to tell how much I will benefit from another 512mb. Is there a program or something that can tell me how much my ram is being used.
