should i go for 600w? or is a 580 good enough?
 
this really should be asked over in the power supply section, but i know a lot of those guys come over here too. an average drive takes 20-25W, but what you are really in need of is more amperage on the 5v line. that part, im not sure about for how much is required for your setup.
 
What video cards, if any, are you using? They're the other big factor that's missing.

Also, think carefully about your cooling setup. You're going to want good cooling before you kill any drives.
