Just wondering how many video cards can be installed on a single PC?

number of slots == number of cards.

I've got 3 installed here at work, 5 monitor setup, working just fine.

edit:

adding picture just because it makes my e-penis bigger.

im pretty sure that you can have as many video cards as you have slots.
 
With win9x/me, you can run up to 16 displays.
with XP/2k/NT, you can run up to 10 displays.
