We would suggest you UPDATE YOUR PASSWORD and TURN ON 2FA for your account here to further secure it. None of the compromised accounts had 2FA turned on.

My sister in law is going to be leaving her laptop on display as part of her exhibition for her course (the laptop will be running an interactive game she made) and so I'm just editing the Local Group Policies for the new user profile I made for the exhibition (to prevent people closing the game and changing things on the laptop)...

My question is whether there is a way to enable/disable multiple policies at once? I've tried clicking one and holding shift down and selecting further down the list but that doesn't work. Any ideas?

no, you have to do them one by one.

also, local group policies will not effect a specific user; they will effect all users (just FYI, so when everything is said and done you will probably want to remove all the policies you apply)
