While I'm not familiar with Knoppix, in X-windows, I use Ctrl-Alt-+ for upping resolution, and Ctrl-Alt- - (minus) for reducing resolution. Try it and see.
 
if you wanna change the screen resoultion at the boot promt type in

knoppix desktop = rez

for example if you wanted 1280x1024 you would type in

knoppix desktop=1280x1024

make that rez what ever you like, just make sure your moniter can support it.
