Alright folks, after a few months of using eyefinity, the novelty has worn off and I am going back to a single monitor setup.

Bump. I never tried to OC it much for gaming. I ran it at 1085/1400 for a little while when I first got it, and it was game stable on everything I tried. I then dropped it to 1085/900 for bitcoin mining and then later to 875/845 for sustained bitcoin mining as I didn't want the card running at 95C all the time for an extra 100MH/s. It probably has more headroom for OCing, but I would recommend doing a new layer of thermal paste and then doing so. I was content to run stock speeds or underclocked as it was fast enough for my needs.
 
If you decide you want to trade for a different toy, I have a projector I may be willing to offer :)
