If money was not an object, which one would you go with and why?

Both kits are 3000 mhz, 16gb x 4.

Will be paired with a highly overclocked I9 7980xe on water.

I'd go with Corsair due to the popularity, and I also have bad experience with Kingston since last RMA took over a month to turn around when Corsair offers advance RMA. If you buy the memory at b&m store, make sure to keep receipt in the event of RMA as both brands require proof of purchase to process the warranty.
 
I've had a Kingston set running solid at DDR4-3000 for a couple years now with zero problems. Both sets are good though, my experience with Corsair has also been great. I'd personally get whichever was cheaper, and if they're the same price, pick whichever you think has cooler looking heatspreaders.
