How come eVGA is the most sought-after brand for 6800 series cards? Is there something about them that I don't know about? They seem pretty plain to me...

It isn't really, as deals change, people change. We basically just want the cheapest one we can get, and if there happens to be a big deal on the eVGA one, it'll be all the talk.
