I didn't see a sticky saying this was not allowed.

Anyway, I'd like to jailbreak my iPhone 4 5.1. From google it seems there is currently no 5.1 unteathered jailbreak. Although a teathered wouldn't be the end of the world, as I carry a laptop for work. It's less then ideal.
Also looking at an ipad3 for the wife, and flash would be key, as a lot of the web still uses flash, and most mobile sites lack key parts you need the full for.

Where Is a key place for updates? Whats the best to use?

for 5.1, use the latest version of redsn0w. It's a tethered jailbreak, but honestly, I've rarely run into a situation where I absolutely needed to reboot. I actually just downgraded back to 5.0.1 though due to battery issues with 5.1 (seems hit or miss with the iphone 4), but never had a problem with the tether. Just make sure you're careful of what you install from cydia on the road, since some packages require a reboot. Also make sure you don't run out of battery while you're away :D

As for the iPad3, flash isn't really an issue 99% of the time. For the occasional website or video that requires it though, I use skyfire (for video) or photon (for interactive flash content). With the iPad's popularity though, it seems most decent sites have a UI specifically for it.
 
Updates in Cydia are generally handled inside Cydia in a pretty clear fashion.

Mobile flash is dead and everyone including Adobe knows it, that's why they canceled it. I have only run across one flash site in the past year on my mobile devices that wouldn't work at all and It was Springfield Armory.
