What would the difference in performance for Ryzen be between it and 6000MHz 30-36-36-76?

Chances it's Hynix a-die or m-die?
What would you expect it to overclock to?
Would you expect it to overclock to 8000mhz for Ryzen 9000?

No way it will OC to anything near that. Maybe 6800 max if you are an overclocking genius like Buildzoid otherwise those are rather slow RAM modules in comparison nowadays.

My main "workload" is gaming with way too many background apps running. How much slower would it be when paired with a 7800x3d compared to hynix a-die @30-36-36-76 with expo/ buildzoid hynix timings? My budget isn't tight but I like a good deal.

This is the only high capacity DDR5 kit for sale 2nd hand in my country.
 
If Micron it will likely top out below 6000 and still have high latency no where near what buildzoid recommends for hynix.
