Internet Monitoring Utilities

What sort of utilities are out that that are able to monitor websites that users have been accessing? Currently we use a Sonicwall with Sonicview to view reports of activity on certain IP addresses. Anyone with any network knowledge could just change their IP and be untraceable. What other methods could one use to monitor internet usage?
 
Ethereal. Ettercap. Not sure, really, as anyone with enough technical knowledge can get around all sniffers and firewalls and monitors. Really it's up to the person review the logs to determine who's doing waht.

::EDIT:: Actually, if you're worried about them changing their IP's and whatnot, give them limited accounts. Restrict their ability to make changes like that, and then you don't have to worry about it.
 
Proxy with a decent logging system.

I asked this very question many moons ago concerning SurfControl and didn't receive any alternatives, but I can tell you that the reports that software can spit out is nothing short of concentrated awesome.

If you want to really be anal about it, set up an Ethereal box to capture everything*.



*This means every bit of network traffic...not entirely useful for all applications.
