Hi, could you tell me which ethernet is better between "Intel 2.5 Gb Ethernet" and "Realtek 2.5 Gb Ethernet"? (Windows 11, Wi-Fi 5Ghz goes to max 150 Mbps)

The first is on the mobo "Asus prime z790-A" and the second on the "prime z790-P"

Currently they are both great choices. There was a time in past generations where one was better than the other, and vice versa. Intel was the go to for many generations until they had some serious faults. Don't make this your deciding factor between these boards.

so intel offers driver support longer? Realtek lasts something like 6/7 years
yeah basically. there used to be more of a difference with cpu usage and stuff but not anymore, nothin that really matters anyways. so like said, dont base you board choice on that alone, i certainly never have.

I have never had issues with Intel, I have had weird issues over the years with Realtek. For consumer parts it is not as much of a problem, but for enterprise I know if I can reproduce a problem there is someone at Intel that I can A. Get A Hold Of and B. Gives A Shit To Get It Fixed in this driver cycle. I tried to do the same with Realtek and their answer was "when the next driver is released, see if it fixes whatever your problem is."

understood, instead in areas such as Deep learning, AI, machine learning and Cloud gaming can something change? (Cloud gaming because I use the desktop as a virtual machine which sends the video signal to the laptop which simply shows the already rendered video)

While generally Intel has always been the goto, their 2.5Gb has been terrible compared to realtek's 2.5Gb for just general use. Lots of issues with Intel 2.5Gb on consumer boards that I don't know if they've ever completely fixed.
