I have an Asus Maximus IV Extreme. I'm able to install Windows 7 in UEFI mode. Aside from being able to boot from large GPT partitions, what are the other advantages of installing Windows via UEFI? I currently have Windows installed via bios, should I reinstall? Thanks!

Well installing on either UEFI or BIOS makes no difference because Windows doesn't interact with the BIOS/UEFI other than it passing on control to Windows.

Are the benefits listed on http://en.wikipedia.org/wiki/Uefi . This page also states that it must be size matched to the OS, so x64 UEFI for x64 OSes. So you won't have the ability to run 32bit + 64bit OSes on the same system (unless you go VM.)
But yea, unless you need something from UEFI specifically (2.2TB+ boot disk, etc.) don't reinstall for it.

That's not the kind of behaviour I've observed with my UEFI system. I can boot various things, x86 or x64, unless I'm confused about what you're saying...
