I'm using an EVGA X58 SLi with my i7 920 and it has been great so far except for one issue.

When testing the CPU under Prime95, the vcore voltage will jump from 1.352v to 1.399v. This is with testing my 4gz OC. It makes me wonder if my PC is truly stable when it is not under significant load and about the CPU's lifespan.

Should I worry about this?

Mine does that too, on my q9650 and e8400, they are both in Asus P5Q boards that seem to actually undervolt the chips. Mine are set at 1.325v, but the cpu-z show it at 1.30 under load it goes up to 1.31. Never more than the setting in Bios. What is the vcore setting you are using, that is quite a jump you are talking about if its set at 1.352. I would be concerned it its overvolting to cpu under load.

That's strange. Voltage should decrease when the CPU is under load, not increase.

What do you have the Vcore set to in BIOS? Is 1.399 the voltage that CPU-Z gives you?

I have my i7 920 set to 1.2750v in BIOS but this shows as 1.248v in CPU-Z (idle) and drops during load.

This is the evga Vdroop feature in the evga bios. With it enabled the vcore drops and with it disable the vcore increases. What you are seeing is normal with the evga x58 board. If you are still concerned do some searching in the evga forums, It all gets explained in detail there.

That was it... I turned it off and now it is fine. My 3.8ghz OC can run on a much lower voltage now than before for some reason. 4ghz is taking an obscene amount of voltage so I may have to give up on that... my temps are reaching the 70s at 1.375v.

What cooling are you using? Is it 70*C at load or idle?

TRUE 1366; load temps don't even reach 70C at 3.8ghz @ 1.30v.

That's good. Keep it at 3.8 then. Perhaps you can lower the voltage even more. Is it 1.30v idle (CPU-Z) or 1.30v in BIOS?
