Can someone tell me how much OC I can get stable with the stock i5-2500k heatsink? Or would it just be depending on testing different speeds?
 
if you have one of the stock coolers with coper core i think you can oc to 4.0ghz at safe temps.. from sandy bridge and newer I never liked to run stock intel coolers even at stock speeds

I wouldn't recommend trying to OC that chip with the stock cooler. It really isn't that great and doesnt even really do a good job at cooling that chip at stock speeds.
 
what would you recommend for a heatsink for the i5-2500k?

all depend on how much do you want to overclock that chip.. that chip generally run cool and you do not need highest end coolers, i recommend the king of the price/performance cooler in the market, the hyper 212 Evo, with that cooler you will be able to push to a good 4.4ghz and keep good temps and its cheap.. =)

This. I OC'd mine on the stock cooler and it couldnt keep it very cool under load. I had it at 4.0.
