I bought a bundle today that was 16gb ddr3 1600 with a i5 2500. I've read that only the 'k' versions can be overclocked?

that is correct, it looks like after 2 minutes of a google.com search the non K can really only have a small tweek on the turboboost.

2500 has a "limited" unlocked multiplier
4 multiplier (CPU bins) above default + turbo

meaning it'll overclock with four cores active to 3.8GHz and up to 4.1 with one core active

Ah. SOunds like i'll be selling it when it comes in and getting a 2500k from microcenter!
