How would these drives work in a RAID array?

I have 2 IBM DeskStar 180GXP 120GB (IC35L120AVV207) HDDs lying around, so I was wondering how well these drives would perform in RAID 0.

And ive heard some bad things about 'Death'Star drives, Does any of that apply to my 180GXPs?

nope

actual performance will vary depending on the controller and the RAID level (though I assume your taking about RAID 0 )
