It seems that everyone is using Speedfan but few people actually know how to control anything in it. So I thought I'd post a few links that helped me out and will hopefully give everybody else some useful info.
I've looked around and I didn't see anything already posted so if I just missed the thread feel free to delete this one.

Also I've noticed that it seems the speed controls are very limited on some motherboards and it seems normal if only 1 or 2 work.
