I have Microsoft Office 2003 and would like to centralize all my passwords in an Excel document. I have a pretty long password, with letters and numbers, and have selected 128-bit RC4 Microsoft RSA Schannel Cryptographic Provider as the encryption type.

Will this be easy for someone to break?

It's a case of effort vs return.

If someone deems something worth the effort of breaking and have access to the required resources, most things are breakable.

However, provided you don't say... keep nuclear launch codes in the file and advertise your IP everywhere, you should be fairly safe :)

you can easily d/l a free excel passwd remover that has just been updated for XP
