If a was to build a small farm for folding how much RAM would I need minimum, 128MB?

I fold on Windows XP and the client uses about 14MB on my 4 machines. I would install 256MB if you can find a sale and get it for $20-$25. I don't think 128MB is going to save you very much money so go for 256MB.
 
Agreed. Also, 256 will be nice when you sell/give away your farm and replace it with a faster farm.
 
...and if you ever have to do any work (troubleshooting, etc.) on your farm, you'll be much happier with 256MB than you would be suffering along with 128MB.
