It keeps flying by without me being able to see it, it's an ECS board.

How do I delay POST to check cpu ghz?

press delete and see if it'll say in the BIOS, if not, at least your monitor is 'warmed up' and you'll be able to see the initial post screen longer 
What OS are you running, most windows systems you can see the cpu info in the systems properties section. programs/ accesories/ can't remember . there is one of the options allows you to look at all of your hard ware.
My windows box is broken, that part disappeared, and all I use it for is to fold@home and as a printer server.
in linux go to system/ configuration/ hardware and pull it up and it will give you the specs you are at on all your system ( Yast2 in SuSe, lists it out really easily )
or go into the bios and it will give you the current cpu speed, voltage, and if you don't like them you are already there to change them

Even with my monitor warmed up, my video card takes so long to "kick in" that it misses the POST screen. Luckily there's an option in the NF7-S BIOS to delay HD detection for X seconds, so I do that so I can take a look at all that crap.
