How do I change settings on the client?

It sounds like you may not be stopping the client before you try to run the -configonly. Make sure you stop the service first, then run the client with the -configonly flag.
 
fah504-console -configonly from the folder that you have F@H installed in.. Make sure the service is stopped first


 
I create a shortcut to the fah504-console.exe.
Right click on it -> properties.
In the target line add the -configonly flag to the end.

My target line looks like ....... C:\F@H2\FAH504-Console.exe -configonly
