I have an old laptop that I would like to use as a "backup server" and two 250GB mybook drives. I would like to hook up the two mybooks to that laptop, backup my data to mybook 1 and have it mirrored to mybook 2.

I'm sure this is super easy and I'm making this out to be harder than it is but what software could I run on the "backup server" to have these two drives sync up and provide me with a redundant set of backups?
 
Windows? Convert them to Dynamic Disks and mirror them. Software RAID is built into Disk Management.
It's not as preferred as a hardware solution, but sounds like it may work in your case.

Why do you need a "server", why can't you just plug those drives into your main system? Eliminate the middleman.

My only main system is another laptop and it never stays in the same place long enough to have any external drives hooked to it. Also I have a laptop sitting around not doing anything and I want to put it to good use.
 
Makes sense. Then yea, look into setting up dynamic volumes using Windows Disk Management.

Dunno if you have any backup software yet, but definitely look into Cobian Backup, it's free and has a ton of customization available.
