I really have no clue what I am doing in regards to the new i7 CPUs its quite different from the old Core 2 Duos.

So far I have my i7 930 at 3.4GHZ at 1.1v running stable with Prime95. Idle 35-38c and load max of 63c.

System Specs as of Posting:
Core i7 930
Corsair H50 Push Pull
Corsair 6GB DDR3 XM3 1600Mhz 7-8-7-20 1.65V
ATi HD 4850

My goal is to hit maybe 3.75GHZ and have load under 75c?

There are a lot of i7 overclocking guides that you can take a look at (google i7 overclocking guide). Personally I look for bests while moving each setting up to find the limits in various areas. It takes a long time but find that for the most part safer to find my personal best than to try someone else's settings and get fake results or cause harm. If you want a leg up, do some research on what are the safe limits for your hardware. No doubt you will reach your goal of 3.75 without much trouble based on your build, and likely scrape 4G or higher if you got a good proc sample. Also to mention, if this is a fresh build, it is a good idea to use the system at stock settings or close to it (3.4 should be fine) for a little while to break it in. Then slowly test your limits.
