Is an SSD basically just plug & play & let windows do the rest? Or do I need to install the software that came with it & also make changes in BIOS? I was told me I need to change the drive to AHCI. I am running a Samsung 830

If you are doing a fresh install of Windows7 to a brand new SSD, just change the controller mode to AHCI for the port(s) you are using and then boot the windows installer. It will do the rest.

Well I already did a fresh install of win7 but I didnt put the controller mode to AHCI...Can I change it now in BIOS after I installed win 7 already?

Windows 7 SP1 = yes
Windows 7 pre-SP1 = no, well maybe, you have to edit the registry
