I have a sabertooth mobo, and amd 965 cpu need help picking out ram. My rig is flat out for gaming. Also need to know if 8 gb is enough or should I do 16.

I agree with this. G.Skill has been awesome for me even when I had to RMA a kit. I would also recommend taking a look at Mushkin as well.Just get DDR3 1600 1.5V from GSkill, Corsair, Crucial or Kingston.

As for how much, that is entirely up to you. For gaming, I would consider 8GB to be enough for now and the foreseeable future. If, however, you have the money burning a hole in your pocket and you've gotten everything else like a badass GPU, then go with as much RAM as you can afford.
That depends on usage, really. Is the extra second or so saved by faster memory worth it in encoding or rendering? Possibly, if you are doing it a lot.Unnecessary higher frequency modules for an unnecessary higher price. Plenty of 4x4GB 1.5V 1333 and 1600 kits out there for under $90 that will perform just the same in real world use as higher frequency modules with todays processors . :/
