Building a new E6600 rig and I need a little help with selecting the background hardware. Only my second time building a computer so I'm fairly new to this so bear with me.

Monitors: (2) 21" Samsung Syncmasters @ 1600x1200 (Purchased)
Processor: OEM Retail E6600 (Purchased)
Case: NZXT LEXA-NP Aluminum Case

Memory: I'm undecided as far as memory goes, I was leaning towards Corsair XMS DDR800 240-pin 2x1g memory. However I'd like to get the most I can out of this system so I was wondering if I should go with DDR1000 or will 800 fulfill most of my overclocking needs? Was also planning on buying low latency ram with timings of 4-4-4-12 or better.
Hard Drive: Was planning on getting a Raptor then I noticed that Seagate had the new 15,000 RPM Cheetahs and I heard you can boot your system up in 6 seconds with one, so I plan on dropping $500 for one of the 74gb Cheetahs. Since I'll have two computers, I don't plan on using this rig for media downloads, so I'm thinking 74 gigabytes should be enough.
CD/DVD Drive: I really, really want a slot load but Plextor is the only one i can find with max speeds and I really, really don't want a Plextor. I've heard only bad things from them so I'm not sure what to do in this department. Anyone have any suggestions for a good tray load with max speeds?
Video Card: Just need something to hold me over untill i can get a couple good DX10 compatible cards.
As far as Motherboards/SoundCards/CoolingDevices/PowerSupplies go I'm somewhat clueless since I haven't gotten a chance to look at the new E6600 compatible motherboards. Money really isn't an object in this department so I'd like something nice, can you guys recommend something for each of these?
