Right now all my streams are broadcasted through software.

So this is what happens.

2560x1600 game -> stream software -> HD stream.

I also have an old HD PVR and I'd like to use this since newer games (Crysis 3) takes a huge hit when I stream + game at the same time (yes even with all the hardware I have).

The problem is HD PVR only takes HD as input which means I have to play at 1920x1080 so I could connect a HDMI->RCA cable.

I want something like...

2560x1600 -> converter -> HD PVR -> HD stream. Anyone know a good one?

I was looking at professional capture cards and they're a little bit out of my budget since they cost somewhere around 7k to 10k.

* All game-oriented capture cards will only take 1080p and below as input as far as I know unless I'm mistaken then please let me know!
 
When you say "RCA", are you referring to just the connection type or are you implying the signal type (ie: composite or component)?

Off-hand thoughts... I'd separate the rendering (game) from the stream capture. So get a 1x2 HDMI splitter, with one running to your monitor and the other running to another computer to handle the capture. A few products from BlackMagic Design are specifically geared toward your need; look into the "Intensity" line.

However... Many of the components, at a reasonable price range, are only going up to 1080i or 1080p. So I see you're going to have to make a decision between downgrading your resolution to 1920x1080 or dramatically bumping up your budget to a range that supports above 1920x1080 image capture and processing.

Well, the device I was thinking would not allow that -- it simply replicates the incoming signal, and outputs it to two HDMI connections. Those devices also may have a limit of 1080i or 1080p.

Your comment gets into more of an expensive head-end system.

The solution depends on debating your needs against your current budget, so start looking at prices.

You won't find >1080p recording at any decent price. You're actually doing it the right way by using software. Yes it will probably take a lot of resources to run that game, but unfortunately you're stuck with that, or 1080p, or spending a lot of money on the hardware for >1080p. You can look into this: http://www.blackmagicdesign.com/products/decklink/ but I don't know if the 4K version also does 4K over HDMI (which, in v1.4, does support 4K) or only over HD-SDI... SDI is the broadcast interconnect, because HDMI is pretty crappy overall. Nor do I know if it does custom resolutions. Worth looking into though.

Yes, if you can find said HDMI downscaler for decent money, and if both the splitter and the downscaler (and video card, while we're at it) support your 2560x1600 (over HDMI specifically in the case of the video card - i.e. if DLDVI is not required for that res).
