I am considering adding a second GTX 570 in SLI to the system in my signature.

Will my 850w power supply be enough for this?

Also, how close would I be pushing it on power?
 
It can. My brother is running A PII X6 OC 3.6, WC and two reference board MSI GTX 570 in SLI on a 900w Rocketfish for over 6 months. Based my experience you should be fine. I think the full system load is about 700-750w with two cards installed so there you have a nice cushion of power.
 
You should be fine.
the Corsair 850w gets about 87 efficiency under full load and over 90% at 50% load.-
