Hardware options and opinions/ feedback

Looking to build a near-production home server. Near-Production meaning stable and quick enough for the tasks required, but not 24/7 uptime with full redundancy. As quiet with low power consumption would be ideal (and I think achievable). I want this with some room for growth, but not over built to the point of costly additions for no (real) purpose. I think with the use of SSD, I will only need one or two chassis fans, along with a stock HSF, but let me know your opinions.

Host:
ESXi (whichever will work with the Ceton tuner card)
Planned VMs:
Win 7 – Media Browser, Ceton Tuner PCIe card via Passthrough
Win 7 – HomeSeer, Passthrough USB ports (this is a planned VM, and not one currently migrating. Feedback appreciated. How many USB ports do you guys use, are serial ports necessary, dedicated LAN? I’m new to HS, but plan on spinning this up in a few months)
TurnKey Linux- LAMP (low key web dev work and dabbling)
BackTrack (more dabbling)
Torrent OS – Probably TurnKey Linux (I don’t really need this VM, but I want to plan for it).

Hardware:
Dual Intel NIC onboard, one dedicated to ESXi
PCIe – Dual Intel NIC (General VM use)
PCIe – Ceton Tuner Card
Internal USB for Host OS
SSD for VMs (which drives, which size, and how many for the planned VM usage)
Spindle drive for storage (TV recordings, web server, torrent box use)
RAM?
CPU?
Motherboard?
Case – 2U I think is all that is needed with low profile PCIe cards? Is Ceton low Profile?

*Buffer extra room for another two or three VMs to get added if need be.
