So I have a Freesync monitor that is Gsync compatible should I be using HDMI or should I be using the Displayport or does it work with both connectors?

Gsync compatible only works over DisplayPort. You also need a fairly new GTX card (I think 10-series or above).

Your info is outdated. Nvidia has enabled Freesync (aka "Gsync compatible") over HDMI via new drivers since late 2019.

I can confirm that my Samsung C32HG70 Freesync 2 monitor works with GSync via both Displayport and HDMI using my RTX 2080, although in the case of my monitor it caps out at 120hz over HDMI so Displayport at 144Hz is still preferable.
