That said, I find it weird that...
...the GPU monitor shows no temperature issues
...the GPU monitor shows no frequency drops
...the games in which "hitching" occurs are old--StarCraft II and undemanding Sanctum (2)
...hour-plus loops of maxed-out Unigine Heaven 4.0 and 3DMark FireStrike Extreme display no issues whatsoever
By "hitching" I mean the game freezes but does not crash, alt-tabbing or CTRL-ALT-DEL make it behave again. No crashes have been observed. I do not see a "Display driver has stopped responding but has recovered" message though.
I've enabled over-voltage on my GeForce 780GTX OC WindForce (Gigabyte) to 1.188v, dropped back to 1034/1086/1163 (no memory OC). Temperatures don't hit 70C. Haven't tested the over-voltage enough to know if that will fix it.
