I looked at etherpad, but is sorta is at a in-between point. I need to have authentication. Any ideas?
 
Feng Office (used to be called OpenGoo, because it's a Google Docs clone) has an open source version that you can install on your own server:

It's got loads of other features, but there's a decent collaborative document editor in there.

I'm also interested in finding a great open source collaborative word processor with a web UI (preferably without a bunch of other office suite stuff) so please post back if you find one you like.
