What processors do the 12 bay lenovo chassis have? Will the controller manage the drives separately so that I could run something akin to unraid to allow hot addins and such?

The SA120s are DAS = Direct Attached Storage sleds - you connect them up via SAS controllers. Certainly the drives are hotplug however assuming your raid level you setup can handle whatever you are changing.
