Flat panel's display options and DVDs??

i have a 2405fpw and an Nvidia 6800 GT card. When i open up the video card's control panel, it has 4 options to let me choose how lower resolutions are displayed. Teh options are Display Adpater setting, Centered output, monitor scaling, and fixed aspect ration scaling. I have no clue which one is better.

Also, when i play DVD movies on the monitor or high definition videos from my hard drive (1080), they dont seem to have good quality, they just look like im playing them on a regular monitor or analog TV. i use PowerDVD. Is there something i can do to get them to play at 480, im lost? thanks for your help
