I got a GTX 280 last week and realised it needs both 6 pin and an 8 pin PCIe connectors in to work, trouble is my current PSU only has 6 pin.

So, my question is which would be the best modular PSU to run 1 card ( all opinions welcome...price not an issue).

What are the specs for the rest of your system? Kind of hard to recommend a power supply without that piece of information.

currently using Tagan 580w PSU.....hasnt got an 8 pin PCIe though.

An 800W PSU would be overkill for your setup. Can't think of any other decent modular PSUs that have an 8Pin PCI-E connector.
