Fan controller help

I'm planning on buying a Sunbeam Rheobus fan controller for my new build.
However, some of the fans I've been looking at say they have a fixed rpm (eg 1000rpm etc), so what effect would putting these on a variable speed fan controller have, as obviously the purpose of the fan controller is to increase / decrease fan speeds, so would a fixed speed fan work or break on a controller?
 
well with most fan controllers.. they change the rpm's by changing the voltage.. so even though its a set rpm like 1000rpm's it will still change.. most of the fans you see that show a variable rpm speed already come with those stupid little low medium high controllers which is what you dont want..
