Assuming I get 6950s that can't be shader unlocked and minimal/no OC..

Do you think the 6950s are good enough to run in 5760x1080 with some moderate (2-4) AA and 4-8AF?

Looking at the Anandtech bench, there's a 3-15FPS gain in running CF 6970 vs 6950 with the average being somewhere around 5-6FPS or so. The bench isn't for anything higher than 2560x1600 though so I'm not sure if it scales linearly up to 5760.

I know the 'best' answer is 'wait for HD7000' but assuming that doesn't happen, what would you go for?

I run two 6950 in crossfire and I can't enable all the eye candy in every game. Maybe it's me. Anyway, I think that you are best served by 2 6970 for Eyefinity.

Which games? Metro 2033 is the only one I've found aside from Arma 2 (can't max post processing) and The Witcher 2 (no ubersampling). I guess it depends on what your definition of all the eye candy is.

I'm OK with not running ridiculous settings (e.g. max AA, max AF, settings at super duper uber can't-run-on-anything-less-than-3-580GTX-high) but I don't want to have to turn down things like textures to low or run no AA, etc

Then yes, it's plenty. If you have any games that you would like me to test and tell you what settings I can run let me know.

I guess I'm really concerned about future games but a good couple of benchmarks would be BFBC2 and Metro 2033 - I think those two would give me a good idea of what to expect.

I'd like to be consistently in the 45FPS+ camp

These are really rough, but you get the idea:

BC2 Settings:
DX11, All High, 4x AA, 16x Aniso, HBAO Off
Averaging ~75 fps @ 6048x1080 in a full multiplayer game
I didn't stay long due to the CTD issues with eyefinity/surround (see my other thread re: the R11 patch that fixes this -- coming soon -- vietnam works in eyefinity currently), and crash issues with running afterburner at the same time. It is more than playable at these settings and easily sits above 60fps. Ran it in vanilla for you. Vietnam seems to be slightly faster. BC2 plays great at these settings. It's worth pointing out that it is highly cpu limited. My framerate doubled going from a q6600@3.4 to a i7 2600k@stock at the same resolution with a 5870. You should be fine with your 2500k.

Metro 2033 sits at around 30fps on High, DX11, AAA, 16x Aniso, DOF off, tessellation on.
I played through it on Normal detail settings, DX11, AAA, 16x Aniso, DOF off, tessellation on. Averaging ~55 fps

Crossfire 6950 Toxic. Basically a 6950 that runs at the same core speed as a 6970. It defaults with a 6950 esque bios 1408 shaders, and comes from the factory with a dual bios switch. When you flip the switch it runs a secondary bios with 1536 shaders (6970) all for $270 after MIR. They also have a proprietary vapor chamber solution different than AMD's vapor chamber that performs better.

Hurry they will sell out in 5, 4, 3.... :D
