I posted this on Power Supplies then realized it might be more appropriate on Vids:

"So I am putting my current rig together with some previously bought parts and I have an evga G3 PSU 1000w (see link) and an RX6800 from MSI. This system will be a generational upgrade for me as I haven't had a GPU that has ever needed more than x2 8 pin connectors before. The RX6800 has 3! that's a lot for me to get my head around. My PSU (for Ref. https://www.evga.com/Products/Specs/PSU.aspx?pn=A3DF2771-CCB6-4ED2-AE43-93B224838C41) is totally modular which is also new to me. I have 3 VGA labeled cables. 2 cables have 8 to 8pin the other one has 8 pin to 2x 8 pin. So to safely power the Gpu is it better use 3 discreate cables in the 3 8 pin females on the GPU or is it ok to use the 1 by 2 and the 1 by 1 to power it? I remember all the GPU cable burning horror stories awhile back and am just trying to get the safest setup to avoid catastrophic flamage. Any advice from the great minds here would be greatly appreciated!"

3 separate cables is probably safter, though with that card I'd think you'd be fine with the double headed one as long as it came with the PSU unless you overclock the hell out of it. RX 6800 is a 250W card & 6800XT is 300W. The reference design for both of them has 2 8-pin sockets. 3 means you have a fancy model. The extra socket is there for overclocking. Each 8-pin is officially rated for 150W but they can take about twice that. Add 75W from the slot and you've got 525W of capacity - more than twice what a 6800 is rated for at stock settings.

8-pin connectors rarely melt or cause issues. The meltdown stories are mostly about RTX 4090 and 5090 cards (and sometimes others) with 12VHPWR and 12V-2x6 connectors. 12V-2x6 is a minor redesign of 12VHPWR to try to keep them from melting.

"3 means you have a fancy model." Blush :) Thanks for that, I think that gives me the courage I need to light her up with 3 discrete cables 'cuz why not I have them.

looks cleaner, but not everyone cares about that.
With that card I would use whatever looked cleaner if the case has a window. If not I'd just use 3 cables. Easier to not lose them if they're inside your case.

Thanks again for the help, I'm too old to feel giddy about a new toy but this rig will seem like a revolution from what I have been using.
