ESXi 5.1 ISCSI setup?

I have an ESXi 5.1 server connected to an ISCSI unit. I'm attempting to reduce latency issues. How has everyone set their units up?

I currently have two physical NICs with two VMKs attached to each. which map to two ports on the ISCSI unit(each VMK is on a different VLAN as each port on the ISCSI unit is separated).

Should I be combining both NICs into one vSwitch?
 
Are you using a VSS or VDS? Are you allowing all VLAN traffic to the VSS? What kind of latency times are you seeing?
 
How much latency? I seriously doubt the latency is being caused by your network config if it's high. Most likely the iSCSI unit.
 
Here are a few things we need to know:
1)What is the iSCSI target(name brand or homebrew)
2)Jumbo Frames
3)What types of disks
4)What type of path selection policy
