Currently i'm running 2008r2 with hyper v enabled and a vew virtual servers 2 webservers a debian sesrver and a rdp box. The vm's are stored on my iscsi storage server and the main os is stored it's dedicated server.

the setup is :

Main server

2008r2 & hyper-V
quad core xeon
8 gigs ( soon to be 32 )
2 x 500 gig sata drives mirrored ( i have 2 spare in case of failure )

Storage server with iscsi

4 x 160 gig drives raid 10 ( till hdd prices come down then will be ordering larger )
4 gigs ram
core 2 duo

As it sits i have my host with a 1 tb drive plugged into it, it backsup everynight at 1am. It backsup my host AND my iscsi volume. On weekends *sunday* i have another usb drive i plug in to backup just the vm's ( the iscsi volume )

Id like to try ESXI 5, as i have been playing with it and enjoy some of the features. However im stumped on how i can back it up like how i am or properly so if the server ( any one ) failed i have a backup like how i do now.

Thoughts ? Suggestions ?
 
I'm not sure I'm reading your post clearly... Your using what backup tool currently? The built in one? How does your current backup work? Does it make a full image of your entire iSCSI volume, as well as your 2008 R2 HyperV Host system, is that correct?

I'm assuming this is for your home system, correct? For ESXi, something on a similar level(though unsupported) would be ghettoVCB;

Correct, the windows 2008R2 ( host ) backs up the host AND my iscsi volume witch holds the vm's for hyper-v.
