Okay, so I am wondering if there is advantageous having a PSU that actually has two EPS-12V 8-pin outputs instead of using a splitter (turning one into two)? I wonder if this is why I am not able to OC my combo (EVGA Classy3 + i7-950) as high as others can because the manual says for OC, both 8-pin 12V connectors has to be used. What do you guys think?

In theory, using a splitter will only allow the motherboard to safely draw half the power it could if it were using two completely independent EPS12V connectors. In practice, a single EPS12V connector can handle a significant amount of power draw by itself, so you really aren't limited at all by using a splitter.
